Nduja pasta

Not my best photography, but trust me, it’s tasty as can be

Inspiration

So I had a bit of leftover Nduja (cover your eyes Italians, but I used English Nduja from my local butcher) after using a bit for pizzas. A quick google lead me to this recipe which I just modified a bit as below. Super quick and tasty.

Ingredients

  • Nduja 4 tbsp (I used Dorest Nduja but I’m certain most will work great)
  • Crème fraiche 2 tbsp
  • Shallots 1
  • White wine 1 dl
  • Peas 1 dl
  • Passata 3 tbsp
  • Pasta water 5 tbsp
  • Salt
  • Pasta for two people
  • Freshly grated Parmesan

Method

  1. Boil up your pasta per instructions on the pack
  2. Dice up shallots and sauté in a knob of butter over low to medium heat until soft
  3. Add in your Nduja of choice and mix it all together until Nduja is melting
  4. Deglaze the pan with white wine and reduce
  5. Stir in passata, crème fraiche, pasta water and peas
  6. Let it cook and reduce for a few minutes until medium thick
  7. Add in drained pasta and Parmesan
  8. Serve immediately!
