
Inspiration
So I had a bit of leftover Nduja (cover your eyes Italians, but I used English Nduja from my local butcher) after using a bit for pizzas. A quick google lead me to this recipe which I just modified a bit as below. Super quick and tasty.
Ingredients
- Nduja 4 tbsp (I used Dorest Nduja but I’m certain most will work great)
- Crème fraiche 2 tbsp
- Shallots 1
- White wine 1 dl
- Peas 1 dl
- Passata 3 tbsp
- Pasta water 5 tbsp
- Salt
- Pasta for two people
- Freshly grated Parmesan
Method
- Boil up your pasta per instructions on the pack
- Dice up shallots and sauté in a knob of butter over low to medium heat until soft
- Add in your Nduja of choice and mix it all together until Nduja is melting
- Deglaze the pan with white wine and reduce
- Stir in passata, crème fraiche, pasta water and peas
- Let it cook and reduce for a few minutes until medium thick
- Add in drained pasta and Parmesan
- Serve immediately!
