Breakfast Tacos: A Morning Fiesta

Starting the day with a burst of flavor and color, these Breakfast Tacos turn any morning into a fiesta! Perfect for a leisurely weekend breakfast or a special brunch, this dish combines the warm, comforting embrace of spiced eggs wrapped in soft flour tortillas with the vibrant, tangy accents of fresh salsa and creamy avocado.

Mine are nowhere near the beauty of the ones we had in Austin, TX when staying at the Hotel San Jose (NB: awesome converted motel that I’d highly recommend) and dipped into the place next door, Jo’s Coffee, for breakfast tacos that blew our minds. These will do the job though.

The blend of cumin, chili flakes, and coriander in the eggs adds just the right amount of kick, ensuring every bite is as exciting as the last. Topped with the fresh crunch of pickled radishes and the smooth melt of cheese, these tacos are all about balancing textures and flavors.

Ingredients

  • For the base tacos:
    • 4 flour tortillas
    • 3 eggs
    • 1/2 tsp cumin
    • 1/2 tsp ground coriander
    • 1/2 tsp chili flakes
    • Salt and pepper to taste
    • Oil or butter for cooking
  • Toppings (feel free to adjust to suit your desires):
    • 1 ripe avocado, sliced
    • Pickled radishes (homemade or store-bought)
    • Grated cheese (your choice, something melty works best)
  • For the Salsa:
    • 4 small tomatoes, finely chopped
    • Juice of 3 limes
    • 1 small red onion, finely chopped
    • Salt to taste

Method

  1. Make the Salsa:
    • In a small bowl, combine the chopped tomatoes, lime juice, and chopped red onion. Season with salt to taste and set aside to let the flavors mingle.
  2. Scramble the Eggs:
    • I tend to do them the ‘Gordon Ramsay’ style, but scramble them however you like, adding in the cumin, coriander, chili flakes, salt, and pepper until they are done to your liking. I’d recommend not going too soft so your job of folding them in the tortillas and keeping them there isn’t too difficult!
  3. Warm the Tortillas:
    • Warm the tortillas in the pan or microwave to make them pliable.
  4. Assemble the Tacos:
    • Lay out the warm tortillas and divide the scrambled eggs among them.
    • Top each with slices of avocado, a generous helping of pickled radishes, and a sprinkle of grated cheese.
    • Spoon over the fresh salsa liberally.
  5. Serve:
    • Serve immediately, paired with a hot cup of coffee or a fresh juice, and enjoy the vibrant start to your day.
