When you’re craving the flavors of pizza but don’t want to fuss with dough, this “Not-Pizza” Pizza Toastie comes to the rescue. Packed with cheesy goodness, rich grated tomatoes, and your favorite toppings (pepperoni, anyone?), it’s the perfect quick-fix meal that satisfies all those pizza cravings.
Ingredients
• 2 slices sourdough bread
• 2 ripe tomatoes, grated
• Cheese (mozzarella, cheddar, or a mix)
• Olive oil, for brushing
• Your favorite toppings (e.g., pepperoni, olives, mushrooms, etc.), but I’d recommend no more than 2.
• Salt and pepper, to taste
Method
1. Prepare the Bread:
• Brush one side of each slice of sourdough bread with olive oil.
2. Assemble the Toastie:
• On the non-oiled side of one slice, spread the grated tomatoes evenly. Sprinkle with salt and pepper to enhance the flavor.
• Add a generous layer of grated cheese over the tomatoes.
• Top with your chosen toppings, like pepperoni or sliced mushrooms.
3. Toast the Sandwich:
• Place under the grill (or salamander as you might have heard it referred as)
4. Serve:
• Eat almost immediately (don’t want to burn your tongue!). It’s perfect on its own or paired with a simple salad or dipping sauce.
