Hearty Sausage Mezze Maniche with Sherry Vinegar and Mustard

Ingredients

  • 3 traditional pork sausages, cooked and sliced
  • 4 spring onions, diced
  • 1/2 vegetable stock cube
  • 1 tbsp sherry vinegar
  • 1 tsp Dijon mustard
  • 4-5 tbsp crème fraîche
  • 1 tsp soy sauce
  • Salt and pepper, to taste
  • Pasta (Mezze Maniche or any similar type), enough for 2 servings

Method

  1. Cook the Pasta:
  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain, reserving a cup of the pasta water to adjust the sauce consistency later.
  1. Prepare the Sauce:
  • While the pasta cooks, heat a skillet over medium heat. Add a little oil and sauté the spring onions until they are soft and translucent.
  • Crumble the half vegetable stock cube into the pan and stir to dissolve. Add the sherry vinegar, Dijon mustard, and soy sauce, mixing well to combine all the flavors.
  1. Combine Ingredients:
  • Add the cooked and sliced sausages to the skillet, tossing them with the onion and sauce mixture to reheat and coat them thoroughly.
  • Stir in the crème fraîche and mix until a creamy sauce forms. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency. Season with salt and pepper to taste.

  • Toss the cooked pasta into the skillet, mixing well to ensure every piece is coated with the creamy sauce.
  1. Serve:
  • Divide the pasta between two bowls. Optionally, sprinkle with grated Parmesan cheese or a few fresh herbs like parsley for extra flavor and garnish.
  • Serve hot, and enjoy the comforting blend of flavors.
